Make This Strawberry Crepes Recipe a Holiday Tradition

We Fell in Love with Crepes in Paris

Crepes have been a favorite in our family for a very long time, since we took the girls to Paris for their first overseas trip when they were just 5 and 7 years old, Ava and Sophia were intrepid little adventure seekers on the streets of Paris. We visited the top of the Eiffel Tower and caught snowflakes on our tongues, had a snowball fight in the plaza fronting Notre Dame, and ate many upon many crepes from street vendors. And a love affair for crepes was born.
Now fully grown, the girls still remember those Parisian crepes and love it when I make them at home. I can’t say whether I’ve mastered the flavor of those special memories, but this Strawberry Crepes Recipe is still a family favorite.
And don’t be intimidated – this recipe is easier to make than you think!

Strawberry Crepes Recipe for the Holidays and Beyond

Of course you can make this Strawberry Crepes recipe any time of year that fresh strawberries are available, but during the holidays they seem extra special. Maybe it’s the festive combination of red strawberries and white sour cream that looks like a candy cane? Who knows, but it works!

Strawberry Crepes Recipe

Makes about 12

Ingredients

  • 1 cup unbleached all-purpose flour
  • 2 tablespoons granulated sugar, separated
  • 1/4 teaspoon kosher salt
  • 1 1/2 cups a2 Milk® Whole Milk
  • 4 large eggs
  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon vanilla
  • 3 tablespoons unsalted butter (unmelted, save aside for cooking)
  • 1 pound fresh strawberries, cored and sliced
  • 1/2 cup strawberry preserves
  • 3/4 cups sour cream

Directions for Making Strawberry Crepes Recipe

To Make the Crepes:

1.    In a blender, mix flour, 1 tablespoon sugar, salt, a2 Milk, eggs, vanilla and butter until smooth, for about a minute. Refrigerate for 20-30 minutes, and remix in blender for 1-2 seconds to combine.
2.    Coat a crepe pan or nonstick skillet with butter over medium heat. Using a 1/3 cup measuring cup, scoop batter and pour into skillet. Tilt pan to ensure batter is spread evenly across bottom of pan.

3.    Cook until crepe bubbles slightly and edges begin to lift from pan, about 1 to 1 1/2 minutes. Using a spatula and your fingers, gently flip crepe and ensure it lays flat on bottom of pan. Cook on second side for about 30 seconds until just set and appears lightly golden. Remove onto paper towel-lined plate.

4.    Repeat process with remaining batter, coating pan with more butter between cooking each crepe.

To Stuff the Crepes:

1.    Slice strawberries and place in medium bowl. Sprinkle with 1 tablespoon sugar, gently mix and set aside.

2.    Place crepe on a plate or flat surface. Using a spoon, spread 1-2 teaspoons strawberry preserves in a line across middle of crepe. Using a separate spoon, spread 1 tablespoon sour cream across middle of crepe directly underneath preserves. Top middle of crepe with generous line of fresh strawberries.

3.    Fold bottom half of crepe upwards to cover strawberries and roll from underneath like a burrito.

4.    Place on plate and serve. Can be garnished with dollop of sour cream and slice of strawberry if you are feeling extra fancy.
