For my lunch break, I wander to the kitchen when I’m hungry and have sometimes made poor choices because I’m in a hurry. That’s where this time-saving recipe for prepared beef roll-ups is a nutritious and easy solution.

The last thing I want to do when I am hungry for lunch is prepare and cook a meal. When I’m in the zone with work and really feeling productive, I don’t want my routine interrupted by meal complications. I came up with this fast and easy recipe for lunch roll-ups because I want to eat nutritious, fresh ingredients.

Prepared Beef Products Provide Nutritious Alternative

Prepared beef products offer great versatility for people who want to meet nutritional needs. I can easily find products in the grocery aisles that include low and reduced sodium, low and reduced fat, American Heart Association certified, organic and grass-fed options, Kosher and more. What’s more, nutritional benefits include a convenient source of protein, vitamins and minerals the body needs.

These are prepared beef products that are pre-cooked and pre-seasoned like deli roast beef, pastrami, beef salami and more. They come ready to enjoy straight from the package, chock full of flavors and spices.

And the popularity of prepared beef products is evidently a growing phenomenon. During the pandemic, deli meat sales have soared and some products in the category continue to see double digit increases.

Using Prepared Beef Products in Recipes

As the primary cook in our family, I try to give myself a break a couple of times a week. Shortcuts like using prepared beef products in recipes allows me to maintain the delicious flavors. I don’t have to sacrifice the time necessary to cook it from scratch myself.

Yet I don’t need to make myself another sandwich. As tasty as they are, I’m trying to cut down on the carbs in bread. So that’s how this recipe for prepared beef roll-ups came to life. All the goodness of a freshly made sandwich without the bread.

Recipe for Prepared Beef Roll-ups

Because I like a little variety and enjoy different flavors in the same meal, I came up with two different versions of my recipe for prepared beef roll-ups. One version I call the Garden Roll, which uses roast beef as the main ingredient. The other version is a Spicy Roll, using beef summer sausage. Both are delicious, alone or served together!

Recipe for Garden Roll Prepared Beef Roll-ups

Serves 2

Ingredients

  • 2 large slices prepared roast beef (available at your local grocery)
  • ½ to 1 teaspoon Chipotle Mayonnaise (use quantity to your preference)
  • 2 pieces of sharp cheese, cut lengthwise to make long skinny rectangles
  • 2 dill pickle spears
  • 2 slices of fresh tomato, cut in half moons
  • 4 strips of roasted red pepper
  • 2 slices of avocado
  • 2 pieces of romaine lettuce

Instructions

  1. Place the slices of prepared roast beef flat on a cutting board.
  2. Spread each piece with a thin layer of chipotle mayonnaise.
  3. Divide remaining ingredients between the two pieces, placing towards the bottom so you have room to roll up.
  4. Hold the ingredients in place, and carefully roll the prepared roast beef away from you to cover the ingredients. You should have two delicious rolls with prepared roast beef on the outside and the rest of the ingredients in the center.

Use your fingers to eat the roll-ups similar to a burrito.

Recipe for Spicy Prepared Beef Roll-ups

Serves 2

Ingredients

  • 2 slices prepared beef summer sausage, cut lengthwise in long ¼-inch ovals
  • 2 teaspoons Onion Chive Cream Cheese Spread, divided
  • 1 teaspoon sriracha sauce, divided
  • 2 green onions, cut in 3-inch segments and slivered
  • 2 pieces cucumber, cut in 3-inch segments and slivered
  • 2 pieces carrot, cut in 3-inch segments and slivered
  • 2 sprigs of fresh cilantro (optional)
  • 2 pieces romaine lettuce

Instructions

  1. Place the slices of prepared beef summer sausage flat on a cutting board.
  2. Spread each piece with a thin layer of the cream cheese.
  3. Draw a small line of siracha sauce across the sausage midway.
  4. Divide remaining ingredients between the two pieces, placing towards the bottom so you have room to roll up.
  5. Hold the ingredients in place, and carefully roll the prepared beef summer sausage away from you to cover the ingredients. You should have two delicious rolls with prepared beef summer sausage on the outside and the rest of the ingredients in the center.

Use your fingers to eat the roll-ups similar to a burrito.

These recipes for prepared beef roll-ups are pretty popular in our house. I often end up making a batch of them for lunch, and my family descends out of nowhere to mow through them.
