Light Summer Dinner: Creole Salmon Recipe with Lemon Garlic Sauce

Summer is a time when meals tend to get naturally lighter. Maybe the warm weather makes us feel uncomfortable when we eat a heavier meal. In our house, seafood tends to become more popular this time of year and I search for ways to make something the whole family will love. Light and healthy dishes like this Creole Salmon recipe with Lemon Garlic Sauce is a good way to please everyone. My family loves this combo of flavors, and it’s a healthier choice. (But I don’t tell them that or they won’t eat it!)

I don’t cook fish at home very often, because I’m always concerned I will somehow ruin it. We know how to grill fish, but preparing a salmon dish on the stove in my kitchen has always daunted me. At first, I was afraid to try even an easy salmon recipe. But I’ve made this Creole Salmon recipe a bunch of times now, and it’s easy and delicious.

The combination of tart lemon, a bit of brown sugar and the creole spice blend perfectly with the salmon.

Creole Salmon Recipe with Lemon Garlic Sauce

This Creole Salmon recipe is such an easy salmon recipe! No stinky kitchen, and a family of happy campers who gobbled it up. The Creole seasoning I use is flavorful but not too spicy, so I know my kids will eat it too.

Ingredients for Creole Salmon Recipe

  • 3 Tbs olive oil
  • 4 salmon filets, about 1/2 pound each
  • 4 tsp Creole seasoning
  • 2-3 cloves garlic, minced
  • 2 Tbs salted butter
  • ¼ cup chicken broth
  • ¼ cup white wine
  • 1/3 cup lemon juice
  • 2 Tbs brown sugar
  • 1 Tbs fresh parsley, chopped
  • 2 Tbs Parmesan cheese, grated

The sauce simmers down and thickens while the salmon finishes. Mmmmm!

Directions

  1. Pat salmon filets dry with paper towel. Divide 1 tablespoon of olive oil among all 4 filets, drizzling on top of pink side and rubbing in to coat each piece. Sprinkle 1 tsp of Creole seasoning on each filet and rub in with your hands.
  2. Heat olive oil in a large pan over medium heat. Place salmon filets in pan skin side up and cook for 4 minutes. Turn them over and cook for another 2 minutes. Transfer to plate and set aside.
  3. In the same pan, melt butter and add garlic. Cook for 1 minute and add broth, wine, lemon juice and brown sugar. Mix and bring to low simmer, with small bubbles just starting. Add parsley and stir.
  4. Add salmon filets back into pan and simmer for about 4 minutes. Sauce will reduce and thicken, but be careful not to burn.
  5. Sprinkle with parmesan, plate and serve with sliced lemon and dash of parsley for garnish.
