In this recipe, velvety smooth pumpkin is spiced up and topped with a crunchy, brown-sugar-infused cinnamon crumble. It bakes right into the top of the bread, and in the oven becomes both crunchy and melty at the same time. Yum! Imagine looking out the window at the changing color of the autumn leaves while taking a bite of this flavorful bread. Makes 1 loaf

Ingredients for Cinnamon Crunch Pumpkin Bread Recipe

For Pumpkin Bread:
·       1/2 cup butter, softened
·       1/2 cup sugar
·       3/4 cup brown sugar
·       3 eggs
·       1 cup canned pumpkin
·       1 teaspoon vanilla
·       2 cups all-purpose flour
·       1/2 teaspoon salt
·       1 teaspoon baking powder
·       1 teaspoon baking soda
·       1 teaspoon pumpkin pie spice
·       1 teaspoon cinnamon
·       1/2 teaspoon ground nutmeg
For the topping
·       1 teaspoon cinnamon
·       1/4 cup flour
·       1/4 cup brown sugar
·       4 tablespoons butter (cold)
·       1 7-ounce container Tillamook® Original Cream Cheese Spread

Instructions for making Cinnamon Crunch Pumpkin Bread Recipe

Preheat oven to 350F. Butter and flour a 9×5-inch loaf pan and set aside.
  1. In a large mixing bowl, add the first 6 ingredients through vanilla, and whisk to combine.
  2. Add the remaining ingredients and combine gently with a spatula or spoon until just combined. Do not over mix or bread will be too dense and tough.
  3. Pour 1/2 of the batter into the prepared pan, and set aside.
  4. Using a separate bowl, add all the topping ingredients and mix with fork to combine into loose crumbles.
  5. Sprinkle ½ of the topping mixture on top of bread batter, careful not to reach the sides of the pan.
  6. Pour remaining pumpkin bread batter on top, smoothing the top.
  7. Sprinkle remaining topping mixture on top of the batter, spreading evenly.
  8. Bake for about 50 minutes, until a toothpick inserted in the center comes out clean.
  9. Remove from oven and let cool in pan for 10 minutes. Remove from pan and cool on rack before serving.
