Blueberry Ginger Mojitos? Yes Please!

It’s no secret that two dads like a good cocktail now and then, and it’s fun for us to make them at home with friends. This weekend we concocted these delicious Blueberry Ginger Mojitos using fresh summer ingredients from our own garden and the local farm stand, and they were pretty darn good if we do say so ourselves!

I posted a photo and a bunch of people asked for the recipe, so here it is for your summer drinking pleasure. Note: I doubled the recipe since we had a bunch of friends over.

BLUEBERRY GINGER MOJITOS

(Recipe from Farm Fresh To You)

INGREDIENTS

For Ginger-Infused Simple Syrup:

1/4 cup grated fresh ginger

1 cup granulated sugar

1 cup cold water

For the Mojito:

1 cup fresh blueberries

1 lime, cut into wedges

20 to 24 fresh mint leaves

4 ounces ginger-infused simple syrup

4 ounces spiced rum (we used white rum)

5 ounces club soda

ice cubes

blueberries, for garnish

mint leaves, for garnish

lime wedges, for garnish

INSTRUCTIONS

Ginger-Infused Simple Syrup:

You’ll need 1/4 cup of grated fresh ginger, (we suggest you peel the whole ginger root, cut into smaller pieces, and use a food processor or blender to pulverize).

In a small pan, bring the ginger, sugar and cold water to a boil and stir until the sugar dissolves completely. Cover and let it steep for 20 minutes.

Pour the mixture through a strainer and cool in the refrigerator. Makes enough for more than a pitcher full.

Mojitos:

Place 1/2 cup of blueberries, 10-12 fresh mint leaves and a lime wedge in each glass. Muddle the ingredients by pressing it down lightly with the end of a wooden spoon and giving a gentle twist.

Add the rum, ginger-infused simple syrup and club soda. Add a couple of ice cubes and stir. Garnish each glass with some fresh blueberries, a sprig of fresh mint and a wedge of lime.

Mint is super easy to grow in your garden, even in pots.
